CHEF POM TAKES OVER THE SLATE’S NEXT BOLD EVENT FROM THE EMPEROR’S TABLE TO SHANGHAI AFTER DARK

Two nights, two venues, one story. The Slate celebrates the heritage behind Phuket’s tin-mining era, moving from an intimate dinner at Rivet & Rebar to a lively night of sharing plates at Coolies Club in Old Phuket Town.

26 October 2026: The Slate Phuket announces Chef Pom (Thanarak Chuto) for its next BOLD event on 20 and 21 November 2026. Across two very different evenings, at the resort and at Coolies Club in Old Phuket Town, he will creatively reinterpret the Chinese flavours that have shaped Phuket since the island’s tin-mining era.

The weekend opens with The Emperor’s Table, a seated multi-course dinner at Rivet at The Slate, an extraordinary evening where imperial Chinese cuisine meets modern mastery. Chef Pom presents a refined multi-course journey inspired by the flavours, traditions and elegance of China’s royal courts, paired with exceptional wines and brought to life through immersive storytelling.

The next night, the mood changes. Shanghai After Dark moves the party to Coolies Club, the Bill Bensley-designed restaurant and bar on Soi Romanee, which transforms into the glamour of old Shanghai. Bold sharing dishes by Chef Pom, inventive cocktails, live music, mahjong, and immersive performances come together for a vibrant celebration where every corner reveals a new surprise.

Chef Pom began working in Chinese restaurants at the age of 12. Today, he is the artisan behind Chef Pom Chinese Cuisine by TODD, cooking across Cantonese, Sichuan, Shanghai and Hong Kong traditions with seasonal ingredients and contemporary presentation, while leaning into Thai interpretations and techniques.

The pairing is rooted in Phuket’s own story. Chinese workers played a significant role in the island’s tin-mining era, a history woven through the design of both The Slate and Coolies Club, both created by architect and designer Bill Bensley.

For The Slate’s owner, Krystal Prakaikaew Na-Ranong, whose family history is entwined with the island, the connection is personal.

“Phuket’s Chinese heritage is part of my family’s story, and it’s the story we tell through The Slate,” said Krystal. “With Chef Pom, we can interpret it in two completely different ways: first with an intimate dinner at Rivet & Rebar, then with a night full of energy at Coolies Club.”

BOLD events encourage guests to Be Original, Lighthearted and Daring, bringing together food, art, performance, fashion and design through collaborations created for The Slate’s distinctive spaces. The Emperor’s Table follows Madagascar Dreams, September’s fashion and food collaboration with designer Éric Raisina, while earlier editions have drawn on Japanese, Brazilian, Isaan and Spanish influences. BOLD events are held regularly at The Slate as part of the resort’s avant garde spirit that supports creators, artists, designers, musicians, and chefs.
